Ingredients

  • 1 Cup Flour
  • 1 Tbsp Sugar
  • 2 Tsp Rumford Reduced Sodium Baking Powder
  • 1 Egg
  • 1 Cup Trader Joe's Reduced Fat Coconut Milk
  • 2 Tbsp Betterine Unsalted
  • Pam Cooking Spray

Instructions

  • Plug in Dash Mini Waffle Maker. When Light goes off, the waffle maker is heated to the correct temperature and ready to use.
  • Melt the Unsalted Betterine.
  • Whisk the melted betterine, egg, and coconut milk
  • In a separate bowl, mix in the flour, sugar, and baking powder.
  • Combine the wet and dry ingredients in a measuring cup with a spout.
  • Spray the top and bottom of the Mini Waffle Maker.
  • Pour the batter into the waffle maker and close lid. Make sure not to pour too much, as the batter will leak out the sides.
  • Let batter cook for 2-3 minutes or until your desired doneness.
  • Remove waffle from waffle maker, and add additional batter until all batter is used.

Notes

I chose to use Coconut Milk in this recipe, as it is lower in sodium than regular milk or almond milk. But you can either of those, or another milk substitute if you prefer. 
I chose Coconut Milk and Betterine, so that I could keep my Mini Waffle Make Pareve, but if you don't care about that, feel free to use unsalted butter and/or dairy milk.
If you would like to reduce sodium even further, substitute the Rumford Baking Powder with Ener-G Gluten Free Baking Powder, which has 0 mg of sodium. It will bring the sodium levels in this recipe down to 0 mg of sodium per waffle!
