I am so happy to have you join me here on my Kosher low sodium journey. I am sure you are wondering who this mystery woman is behind KosherLoSo?
For those of you who don't know, I got here by way of Meniere's Disease, and am determined to make the best of it.
But honestly, I really just want to find something good to eat that won't make me sick, and won't have me spending every waking hour in my kitchen.
I like to cook, but unlike other food bloggers, it is not my passion. Finding really good tasting food that fits my religious and healthy lifestyle is what is behind this blog. I don't need fancy ingredients and dishes that cost an arm and a leg to impress. However, I do really like to eat. My goal is to find food that I want to eat -- and that I can eat. It needs to be Kosher, low sodium, and taste good - in that order. A big bonus, is if my family will eat it too (and not be able to tell it is low sodium.) I am not always successful in that, and sometimes have to make two different meals if I want my kids to eat. Sometimes, I don't like the food either -- some things really just don't taste good without salt!
You can generally find me running (or carpooling) around like a lunatic while trying to balance working full time, running a household, and being there for my husband, and my four children ages 21 through 11. Because I wasn't busy enough, I decided to add this blog on to my load. On some days, I am questioning the sanity of that. On other days, I know that this blog is something that has given me a purpose outside of my regular job and family. I am doing this for me -- for my health and my sanity. I hope I can share the benefits I am reaping with you.
Finally, being low sodium and kosher is not easy. However, it is a challenge, and I do like challenges. I hope that if you are in the same boat as me, we can help each other take this on, and be KosherLoSo together.
Here's to our health!
