This week is a very important week. First off, my kids went back to school IN PERSON. But more importantly, it also happens to be National Waffle Week, which is annually, the first week in September. I knew that I had to highlight my LoSo Waffles on a Stick.
These waffles on a stick got their start 7 years ago, at my daughter's Bat Mitzvah. She was a coffee fanatic already at the age of 11, and therefore, we decided her Bat Mitzvah would be a coffee/breakfast theme. At the time, she was also obsessed with the television show iCarly, and she told me we "had to do waffles on a stick." I really didn't know what she was talking about, and I thought she was out of her mind. I didn't realize how serious she really was. The breakfast theme was NOT going to be happening without these waffles on a stick.
I was told that the character T-Bo, in iCarly is this guy who sells all different types of foods on a stick, and how awesome this was. So that clearly we needed to have waffles on a stick. Being the great mother that I was, I said OK. I am not quite sure what I was thinking at the time. The caterer thought I was crazy, and told me I could make these waffles on sticks and bring them to the party.
I went about researching how to do this and found this contraption called the Mini Babycakes Waffle Stick Maker, which no one even sells anymore. I spent hours making these waffles, wrapping them in cellophane, and ribbon. Every girl got one. I must admit they did look adorable!
Fast forward to 2020. All summer long, I have been buying boxes of waffles like crazy for my teenage boy, including french toast sticks. Aside from making me go bankrupt, I also couldn't even eat them because the sodium was so sky high. Kellogg's® Eggo® Wafflers® Brown Sugar Cinnamon Roll have 510 mg of sodium for two waffles (4 waffle sticks). So I decided to pull back out the Waffles on a Stick idea, and make waffles that would be low sodium, and fun to eat. And then add in the benefit of being "Corona" friendly -- that is they can be individually wrapped. They make an easy breakfast on the go for my two teenage boys, and save me a heck of a lot of money at the same time.
I ran to find my Baby Cakes machine -- and couldn't find it. I probably decided after the Bat Mitzvah that I was never doing this again. Either I gave it away, or I threw it out. So back on the hunt I went. The Dash Mini Waffle Maker was available in Target (and also from Amazon). It was very easy to use, and I started experimenting. I made one batch with Ener-G Sodium free Baking Powder, and one batch with Rumford Reduced Sodium Baking Powder. Am happy to report, that everyone loved them -- and no one could tell the difference between any of them.
I chose to use Coconut Milk in this recipe, as it is lower in sodium than regular milk or almond milk. But you can use either of those, or another milk substitute if you prefer.
I also chose Coconut Milk and Betterine, so that I could keep my Mini Waffle Maker Pareve. If you don't care about that, feel free to use unsalted butter and/or dairy milk.
If you would like to reduce sodium even further, substitute the Rumford Baking Powder with Ener-G Gluten Free Baking Powder, which has 0 mg of sodium. It will bring the sodium levels in this recipe down to 0 mg of sodium per waffle!
LoSo Waffles on a Stick

Ingredients
- 1 Cup Flour
- 1 Tbsp Sugar
- 2 Tsp Rumford Reduced Sodium Baking Powder
- 1 Egg
- 1 Cup Trader Joe's Reduced Fat Coconut Milk
- 2 Tbsp Betterine Unsalted
- Pam Cooking Spray
Instructions
- Plug in Dash Mini Waffle Maker. When Light goes off, the waffle maker is heated to the correct temperature and ready to use.
- Melt the Unsalted Betterine.
- Whisk the melted betterine, egg, and coconut milk
- In a separate bowl, mix in the flour, sugar, and baking powder.
- Combine the wet and dry ingredients in a measuring cup with a spout.
- Spray the top and bottom of the Mini Waffle Maker.
- Pour the batter into the waffle maker and close lid. Make sure not to pour too much, as the batter will leak out the sides.
- Let batter cook for 2-3 minutes or until your desired doneness.
- Remove waffle from waffle maker, and add additional batter until all batter is used.
