Peanut Butter IS possible. There are definitely peanut butters you should stay away from if you are keeping to a low sodium diet. But there are actually a lot more no sodium or low sodium options than I expected

This Trader Joe's Organic No Salt Peanut Butter is a nice alternative to Skippy. It is smooth and creamy and tastes pretty good too. My only complaint is that it us a little liquidy (not sure that is a word!). But if you mix it around when you open the jar, it gels up nicely. The best part of this Trader Joe's product is not surprisingly, the price. Barney's and Once Again can be very pricey. Buying the Trader's Joe brand will save you some money. It is also not a seasonal product. You will find it easily at your local Trader Joe's.
Something else to note. I have seen many people suggesting the Jif low sodium product. Although it is lower in sodium than the regualr Jif or Skippy or other major peanut butter brands -- it is not low in sodium. Jif is still 80 mg of sodium for a 2 Tbsp serving size. It is lower than the regular Jif at 140 mg and the regular Skippy at 10 mg. Many of the brands above come in at 0 mg -- so it's not even a close contest.
The lower sodium nut butters take some getting used to on a basic peanut butter and jelly sandwich. If you are used to the standard brands, try to adapting to the alternative butters, by using them in a dessert recipe first. Our Peanut Butter Ice Cream Pie is a great place to start!
