Whether you are following a low sodium diet or a heart healthy diet, you can never go wrong with fresh vegetables! I am an actual tomato nut -- I love tomatoes! Any kind, anywhere -- but they do need to be fresh, firm and delicious. They can be paired with so many things. and best of all, a cup of cherry tomatoes are only 7.5 mg! This Tomato Medley Mozzarella Salad is a great way to get your tomatoes in while having a quick and easy salad.
Tomato Medley Mozzarella Salad also has the best of both worlds. Not only does it have tomatoes, but fresh mozzarella cheese as well. If you are on a low sodium diet, you by now know that cheese is definitely not your friend. And boy, do I miss cheese. However, I have found that the Natural and Kosher brand of cheese makes a fresh mozzarella cheese that only has 50 mg of sodium per 1 ounce. That is something I can get behind. But as with anything, you have to be careful. 1 ounce of cheese is fine - another 3 ounces may not be so fine.
Can avocado ever hurt? The answer to that is a definite no! Avocado is known as a superfood for good reason! It has a ton of healthy fats, and is a good source of protein. Avocados do not contain any cholesterol and are low in saturated fat. Most importantly, it is also incredibly low in sodium -- a whole avocado only contains 14.1 mg of sodium.
Add in some fresh basil, balsamic vinegar and olive oil, and this salad is good to go! Best of all, very little dicing or slicing. You can be sitting down to eat this in under 10 minutes -- 5 if you are really speedy.
Tomato Medley Mozzarella Salad
Ingredients
- 2 Tbsp Olive Oil
- 2 Tbsp Balsamic Vinegar
- 1/2 Avocado
- 12 Sunset Wild Wonders Tomatoes
- 2 oz Natural & Kosher Fresh Mozzarella Pre-Sliced
- 1/4 tsp Basil Fresh works even better!
Instructions
- Wash tomatoes, and slice in quarters.
- Slice half of ripened avocado into chunks.
- Cut the 4 oz (4 slices) of fresh mozzarella cheese into smaller chunks.
- Add all above ingredient to a bowl.
- Mix in Balsamic vinegar and olive oil.
- Sprinkle with fresh or dried basil.
