There are basically no great kosher low sodium cookbooks. Although many kosher food bloggers have become more cognizant of a healthy lifestyle, I have not seen much if any focus on a low sodium diet. Many recipes are still full of onion soup mix as a base (especially for Passover!)
Norene Gilletz is one kosher cookbook author who has tried to provide some healthy options for the kosher market. She has written or contributed to:
- Healthy Helpings: : 800 Fast and Fabulous Recipes for the Kosher (or Not) Cook
- The Low Iodine Diet Cookbook: Easy and Delicious Recipes and Tips for Thyroid Cancer Patients
- The PCOS Diet Cookbook: Delicious Recipes and Tips for Women with PCOS on the Low GI Diet
Susie Fishbein also tried to go healthy with Kosher by Design Lightens Up: Fabulous food for a healthier lifestyle
These are all great, but they are not specific to a low sodium diet, and I have yet to see a Kosher low sodium cookbook. (If you have seen one, let me know!)
However, there are a few non-kosher cookbooks which I have used and either have been able to pull recipes straight out of, or have been able to adapt them to make them kosher. Dick Logue's books are a great starting point and have a lot of basic building block recipes like Barbecue Sauce, Pizza Sauce, etc. I adapted my Basic White Bread recipe from his Dick Logue's 500 Low Sodium Recipes.
