This Sun Dried Tomato Roast Chicken was a favorite recipe of mine in my pre-Meniere's life. The original recipe calls for roasted marinated artichoke hearts along with the sun dried tomatoes. I figured I would never be making this recipe again. That is, until I found the Bella Sun Luci Julienne Cut Sun Dried Tomatoes. These sun dried tomatoes only have 5 mg of sodium per serving. Almost unheard of!
I decided to give the recipe a try without the marinated artichoke hearts. I figured (Correctly so far!) that I was never going to find a low sodium version of those. It came out GREAT. The best part of this recipe, is that my entire family loved it. No one noticed that the sun dried tomatoes were low sodium. Nor did anyone dump half the salt shaker on their plate, indicating that they noticed the lack of salt. Instead, they actually asked me to make it again -- and that is truly high praise.
The best part of this recipe is that not only does it taste great, but it is super easy to make. The prep time is literally 20-25 minutes of sautéing, throwing it in a pan with the chicken, and baking it. That's it. It also freezes very nicely. I would suggest making two tins at once, and freezing one for future use, especially around holiday time.
This past week I actually got really excited. I thought I found a kosher jar of marinated artichoke hearts, that were actually relatively low in sodium. They were only 90 mg of sodium for 4 pieces, which is incredibly low for artichoke hearts. Unfortunately, the Kosher Supervision is from a rabbinate in Peru, which is not recommended by the cRc for this specific product. (The cRc recommends their products on a case by case basis.)
So, my hunt for low sodium kosher marinated artichoke hearts continues. I did find though a jar of low sodium roasted peppers, which I think could be a really nice addition to this recipe as well. In the meantime, this recipe rocks even without the artichoke hearts!
Sun Dried Tomato Roast Chicken
Ingredients
- 1 Whole Chicken Cut Into Eighths
- 2 Tbsp Minced Garlic
- 2 Sweet Onions, Sliced
- 2 Tbsp Olive Oil
- 8.5 Oz Bella Sun Luci Julienne Cut Sun Dried Tomatoes
- 1/2 Tsp Black Pepper
- 1 Tsp Garlic Powder
- 1/2 Tsp Paprika
Instructions
- Lay out chicken pieces i a 9 x 13 roasting pan.
- Season the chicken with Garlic Powder, Paprika, and Black Pepper.
- Heat up large frying pan on medium heat.
- Saute minced garlic for two minutes.
- Add the sliced onions to the garlic, and saute for another 5-10 minutes or until onions are translucent.
- Add the jar of Bella Sun Luci sun dried tomatoes, and continue to saute all for another 5-10 minutes until soft.
- Pour garlic/onion/sun dried tomato mixture over the chicken.
- Cover tightly with foil, and bake on 350° for one hour.
