I was never a fish lover. No matter how many times I tried fish, I just didn't like it. I have tried all different kinds and sometimes I just force myself to eat it because of all the Omegas and whatever else my doctor tells me. But then I tried these Salmon Croquettes. And instead of pretending to like them, I actually did like them. The "fishy" taste is so mashed in, that it doesn't really taste like fish. Best of all, they are pretty easy to make, and kid-friendly as well.
They also use our Building Block Unsalted Seasoned Bread Crumbs to keep the sodium down. If you have a stock of these in your freezer already, it becomes really easy.
Ready for Passover
These Salmon Croquettes can be taken on the go and are also easily adaptable for Passover, another real bonus. Just substitute Matzoh Meal for the Unsalted Seasoned Bread Crumbs, and they become even lower sodium than they regularly are.
Want them Even Lower Sodium?
There are also ways to make this even lower sodium if you need -- instead of using the canned salmon, which isn't as low in sodium as we would like, use fresh roasted salmon. You don't even need to add any spices when roasting. Once you add it to the Unsalted Seasoned Bread Crumbs and the other ingredients, you won't even notice the difference.
If you don't feel like roasting the salmon, and don't want to use the canned salmon, you can also use a low sodium tuna instead. Trader Joe's has a great option with their No Salt Added Albacore Tuna In Water. The whole can is about 88 mg of sodium (instead of the canned salmon which is about 600 mg.) Quite the difference.
Put these Salmon Croquettes together with a salad or Salad Bar, and you have an easy, protein filled, light dinner.
Salmon Croquettes
Ingredients
- 15 oz Boneless Canned Salmon I use the Kirkland brand which comes in a pack of 6.
- 1 Large Onion
- 2 Tbsp Sour Cream
- 1 Tsp Lemon Juice
- Pepper
- 1/2 Cup Unsalted Seasoned Bread Crumbs
- Canola Oil for Frying
- 2 Eggs
Instructions
- Mince onions in Mini Food Blender.
- Drain the canned salmon, and empty into bowl. Add in minced onions.
- Mix in eggs, sour cream, lemon juice, and pepper.
- Add in bread crumbs. You may need to add some additional crumbs to hold the mixture together for frying.
- Spray frying pan with Pam or other non-stick spray.
- Add 2 inches of oil, and let it heat up in the pan. Add in a few baby carrots to prevent oil from burning.
- Form mixture into patties, and add to pan two to three at a time. Do not crowd the pan.
- Fry each pattie on each side for 2-3 minutes or until done.
- Drain patties on paper towels as you remove from the pan.
- Transfer patties to platter to serve.
