Is there anything that symbolizes Rosh Hashana more than Pomegranates? Well, maybe a Shofar, but that is certainly not a low sodium option 🙂 I guess you could also go with honey or apple for the win, but in this case we will focus on Pomegranates, as this recipe used a low sodium Pomegranate Sauce.
This Pomegranate Chicken has it all -- it is SUPER easy, low sodium, and tastes great. It literally involves cutting a single vegetable, pouring some sauce and pomegranate seeds, and roasting. That's it.
Really. During this crazy time of year, I can definitely appreciate a recipe like this. In fact, I generally make two trays of this at once, and freeze them raw. I then pull one out Erev Yom Tov, and we have a delicious fresh chicken dish.
The secret of course to this easy chicken is the Oxygen Pomegranate Plum Sauce. Don't you love a recipe where you can open a bottle and pour and be done? This sauce is 0 mg of sodium, so pour away! (Note: be careful not to mistakenly buy the Oxygen Imports Pomegranate and Teriyaki sauce - it has 470 mg of sodium - not 0!) Buy this one:
We added in some onions, sprinkled pepper, mandarin oranges and pomegranate seeds to add some color and flavor, but really you don't even have to. If you are in a rush, as you might be on Erev Rosh Hashana or Sukkot, just pour, bake, and eat!
Every ingredient in this dish is 0 mg of sodium, with the exception of the chicken. Kosher chicken immediately ups those numbers, but at least in this case, that is your total sodium. Empire Chicken Cut Up has 290 Grams of sodium per 4 oz serving. So although this chicken is great, and all the ingredients are 0 mg of sodium, make sure you don't eat too much chicken, or you will likely. go over your sodium limit.
Rosh Hashana Pomegranate Chicken
Ingredients
- 2 Onions, Sliced thinly
- 1 Whole Chicken Cut Into Eighths
- 1/8 Tsp Black Pepper
- 12.3 Oz Oxygen Pomegranate Plum Sauce
- ½ Cup Pomegranate Seeds
- 5 Oz Mandarin Oranges
Instructions
- Preheat oven to 350°
- Layer sliced onions on bottom of 9 x 13 baking dish
- Arrange chicken pieces over the onions.
- Sprinkle black pepper over chicken and onions.
- Pour Oxygen Pomegranate and Plum Sauce over Chicken, making sure each piece is covered in sauce.
- Sprinkle pomegranate seeds and mandarin oranges over chicken.
- Cover tightly and bake for 1 hour, basting every 20 minutes.
- Uncover and continue to bake for the last 15 minutes.
