One of the foods I miss the most since I went LoSo is PIZZA! Tell me, is there anything better than a piping hot slice of pizza (other than maybe a chocolate chip cookie)??? I affirm that the answer to that question is a resounding NO -- there is simply nothing better than pizza. At least in my book. So I figured out a way to have Pizza My Way! The KosherLoSo Way.
The Hunt
One of the first recipes I went looking for once I found out I had to eat a low sodium diet was no salt pizza dough. I have tried a few different ones, and have always come back to the same one. LoSo pizza dough does take some getting used to. It definitely does NOT taste like your store bought slice of pizza. But it does get you pretty close to regular homemade pizza. And for me, that will just have to be good enough.
The best part of making a LoSo pizza dough is that you can then customize your pizza however you want it. No more worrying about which sauces and toppings have sodium. You choose! And there are so many options out there for a great pizza. I personally am a pizza purist, so I generally go with LoSo Homemade Pizza Sauce, topped with fresh mozzarella cheese, caramelized onions, basil and some good old pizza spice to top it off. Both the Prima Pizza Seasoning and Marshall's Creek Pizza Seasoning both have no sodium, but not every pizza spice is zero sodium. (The FlavorGod Pizza Spice is 20 mg for 1/4 Tsp.)
I have tried other toppings like shredded Swiss Cheese, Mushrooms, Roasted Garlic, Roasted Eggplant, Peppers, Sweet Potatoes, Balsamic Vinegar, and White Sauce. But at the end, I always come back to my basic pizza. That is what I miss the most, and that is what I want.
The other really nice thing about LoSo Pizza is that you can make it a Pizza Bar Dinner (or lunch!) for the whole family. I generally make regular pizza dough for the kids and my husband, and a LoSo Pizza dough for myself. I then make a "bar" of all the potential toppings. Everyone makes their own pizza to their liking. I choose all the LoSo toppings - and everyone else shoves the high sodium toppings in my face, like olives (jk!). Honestly, I actually hate olives, so it's not so tempting.
The Tools
Although I don't have a pizza oven (yet!), I do have these great 7 inch pizza trays which I found in Home Goods, and I also bought larger 11 inch trays from Amazon. My 14 year old thinks the 7 inch trays are just a snack size.
I make a lot of pizza dough and then freeze them in small ball size so that they can be used for a 7 inch pizza on another day. This makes it quick and easy to have a fresh pizza out of the oven in minutes. When the rest of my family orders a hot piping pie from our Kosher pizza store, I whip out my dough, and make my KosherLoSo pizza.
The Dough for Pizza My Way
As far as a pizza dough recipe, there is no reason to recreate the wheel and try to make my own recipe -- there are plenty to choose from already in cookbooks and online. I have tried several different LoSo pizza dough recipes and it really is a personal decision!
Here are the ones I have tried:
- Dick Logue's Pizza Dough from 500 Low Sodium Recipes
- Skip The Salt No Salt Pizza Crust in Food Processor
- Sodium Girl Low Sodium Pizza Dough
My personal favorite (so far!) is the Skip The Salt No Salt Pizza Crust in Food Processor, but I have seen many people say they love Dick Logue's recipe. Whatever dough recipe you choose, make it your own!
LoSo Sauce & Toppings for Pizza My Way
For the sauce, I use a modified version of the Pizza Sauce recipe in Dick Logue's Cookbook, 500 Low Sodium Recipes.
Toppings are of course your choice! The recipe below includes my favorites, but it's called "Pizza My Way" for a reason 🙂 Make it your way!
