This Peanut Butter Ice Cream Pie may not be low in calories or sugar, but it IS low in sodium. Although this may seem obvious, it is only low in sodium, when you use a low sodium peanut butter. I used the Trader Joe's Organic No Salt Peanut Butter, which has 0 mg of sodium. But there are definitely other options for low sodium peanut butters out there.
If you have peanut allergies, you can also substitute almond or cashew butter in this recipe. Below are some other low sodium peanut butter or alternative nut butter options. Basically, don't use Skippy!

The other really nice thing about this Peanut Butter Ice Cream Pie is that it can be made dairy or pareve. If you want to keep it pareve, use the Trader Joe's Soy Creamy Vanilla Ice Cream, which has 90 mg of sodium in a 1/2 cup serving (81 grams). If you want to go dairy, any vanilla ice cream will do, though some are lower in sodium than others:

The moral of this recipe, is that although it may be Fall, you can always eat ice cream. And you can certainly always eat peanut butter. Especially when it is low in sodium.
Note of caution, this recipe is not healthy in any way. But is in low in sodium. If you are watching your cholesterol, calories, or sugar, you may only want to treat yourself to this goody for a special occasion!
LoSo Peanut Butter Ice Cream Pie
Ingredients
Crust
- 6 Tbsp Unsalted Margarine
- 1 ½ Cups Graham Cracker Crumbs
- ⅓ Cup Sugar
Pie Filling
- 32 oz Trader Joe's Creamy Soy Vanilla Ice Cream 1 Quart
- 16 oz Trader Joe's Organic No Salt Peanut Butter 454 Grams
- 1 Tsp Vanilla
Chocolate Ganache
- 6 oz Semi-sweet chocolate chips
- 4 Tbsp Heavy Cream
Instructions
Crust
- Mix graham cracker crumbs, sugar and melted margarine.
- Press graham cracker mixture into pie plate.
- Melt unsalted margarine (or butter if making Dairy).
- Bake at 375° for 10 minutes.
- Let crust cool before filling.
Pie Filling
- Allow ice cream to melt to a consistency where it can be mixed easily. Do not let it melt too much so that it is too runny.
- In large mixing bowl, blend together ice cream, peanut butter and vanilla.
- Pour ice cream mixture into cooled pie crust.
Chocolate Ganache
- Microwave chocolate chips and cream together for one minute, taking out to stir after 30 seconds
- Continue to microwave for an additional 30 seconds, or until chips are completely melted and mixture is smooth.
- Spread ganache over top of pie
- Spray back of foil with Pam Spray, and cover pie. with side of foil that is sprayed (so that it doesn't stick.
- Freeze for several hours, or until firm.
