This Black Bean Avocado Salad is one of my favorites! It is SO easy, and SO low in sodium, while still tasting great. This salad makes me feel like a regular person. I am always very jealous of those recipes that tell people to open up a few cans and throw them into a bowl with dressing. They are always talking about how quick and easy it is.
Being on a KosherLoSo diet, I was beginning to think that was never going to happen for me again in my lifetime. Every recipe in the KosherLoSo world seems to involves ingredients that need to be made from scratch. Then I remembered this fantastic salad. I realized with a few substitutions of No Salt Added products, I too could throw together a salad in minutes. And I do.
I use this Black Bean Avocado Salad as a quick backup for Shabbat when I can't think ahead of time of what to make. Sometimes, I decide Shabbat morning to make this! Put it in a pretty bowl and everyone will think you are a superstar. I keep a good supply of No Salt Added canned goods from Stop and Shop on hand so that I always have the option of this salad. And it's a great option! Guests don't even notice that it is low sodium.
I would highly suggest checking out Stop and Shop and Wal-Mart for a large selection of No Salt Added products. Wal-Mart has their Great Value brand, and Stop and Shop has their Nature's Promise brand. They both offer many low sodium options (or at least many more than you would find elsewhere!) Generally the in-house brands are much cheaper than buying the label brand in a kosher supermarket.
So this recipe has many positive things going for it -- not only is it easy and low sodium -- it is also inexpensive.
Black Bean Avocado Salad
Ingredients
- 15.5 Oz No Salt Added Black Beans
- 15.5 Oz No Salt Added Garbanzo Beans
- 15.5 Oz No Salt Added Whole Kernel Corn
- 1 Avocado, Sliced or in Chunks
- 3 Roma Tomatoes Quartered
- 1 Small Red Onion, Chopped
Dressing
- ⅓ Cup Olive Oil
- ¼ Cup Vinegar
- 1 Packet Truvia or Equivalent
- 1 Tbsp Kirkland Organic No Salt Seasoning
Instructions
- Prepare Salad close to when it will be served.
- Mix together in a bowl Black Beans, Garbanzo Beans, Corn, Tomatoes, Avocado and Red Onion.
- Mix in a cruet dressing ingredients (Olive Oil, iInegar, Truvia and Seasoning.) Shake Well.
- Pour dressing ingredients into vegetable mixture and mix.
- Serve immediately.
