I don't know about you, but for me, I really can't live without homemade chocolate chip cookies. They are by far the best dessert out there (with perhaps a close competition with Chocolate Mousse.) So I set out to take my regular recipe and adapt it using low or no sodium baking powder and baking soda. And of course, I cut out the salt completely.
I tried it one way using the Ener-G no sodium baking soda and baking powder (1 cookie came out to 8 mg of sodium). I tried it a second way using the Rumford reduced sodium baking powder, and regular baking soda. (1 cookie came out to 50 mg of sodium).
Clearly, the Ener-G cookie option is better for our sodium counts, which is why I call this the Seriously LoSo Chocolate Chip Cookie. However, I will say that the Rumford option definitely was a better cookie, even if it is only Somewhat Seriously LoSo. You could not taste the difference between a regular cookie and the Rumford recipe cookie. Although the Ener-G products are great because they have no sodium, I do find that the baking products I make with them have a tangy aftertaste. They are also crunchier, without the soft chewy inside that I love. You can taste the difference in the taste and consistency. That is not to say that the Ener-G cookies are bad -- they are just different.
So if you don't mind the slight difference in taste and texture, go for the lower sodium option of the Seriously LoSo Chocolate Chip Cookies. If you can't bear to part with the best chocolate chip cookie ever, treat yourself to the Somewhat Seriously LoSo Chocolate Chip Cookie (and maybe eat less cookies!). E

Seriously LoSo Chocolate Chip Cookies
Equipment
Ingredients
- 1 Cup Unsalted Margarine
- ½ Cup Sugar
- 1 ½ Cup Brown Sugar
- 2 Eggs
- 2 Tsp Vanilla Extract
- 2 Tsp Ener-G Baking Soda This is already doubled!!
- 3 Tsp Ener-G Baking Powder This is already doubled!
- 2¾ Cups Flour
- 2 ½ Cups Semi-Sweet Chocolate Chips
Instructions
- Preheat oven to 350°
- Line cookie sheets with parchment paper for easy cleanup.
- Cream together margarine, sugar, and brown sugar until smooth.
- Add in eggs and vanilla extract, and mix well until creamy.
- Mix in baking powder, baking soda and flour.
- Stir in chocolate chips.
- Scoop out cookies onto the cookie sheet, making sure to leave space between the cookies to rise,
- Bake for 14-16 minutes or until lightly browned.
- Remove from oven and let cool for 2 minutes.
- Shift cookies to cooling rack.
