I love dessert. I would eat dessert for breakfast, lunch and dinner if my waistline would allow for it. My bridal shower eons ago was a dessert theme. I love dessert. One of the bright lights when I had to go LoSo was that I could still make desserts at home, and most of them would still be LoSo. If you are careful, most of the ingredients you need for baking and desserts are relatively low in sodium. There are also many fresh fruits which are sodium free, so if you put together a low sodium dessert with fruit, you get a great combination. This Apple Cobbler defnitely fits the bill.
Apples are a staple in the dessert category. Apple Pie, Baked Apples, Apple Compote, Apple Strudel, Apple Crisp, Apple Cake -- you get it. There are tons of possibilities. If it is the Fall, you can also add in a fun trip apple picking, and you have a great family activity -- as well as the apples for all of these great recipes!
This Apple Cobbler is a winner. Sugary on top, with the sweet melted apples within. I make them in small ramekins, that way they are portioned controlled. Otherwise, I would eat the whole pan. For your real sweet tooth, serve warm, and some whipped cream or some Trader Joe's Organic Soy Creamy Vanilla Ice Cream (90 mg per 1/2 Cup). As a bonus, these both both the ice cream and whipped cream work after a meat meal as well. You can use Pareve Whipped Cream (either canned, or whip up some Rich's Whip). The Trader Joe's Soy Cream is Pareve as well.)
This apple cobbler also has very limited ingredients, and is very simple to make. The only annoying part is peeling the apples, but if you can get past that, it will be worth it.
With this Apple Cobbler, I can have my cake and eat it too!
Apple Cobbler
Equipment
Ingredients
- 8 McIntosh Apples
- 1/4 Cup Orange Juice
Topping
- 1/2 Cup Unsalted Margarine
- 1 Cup Sugar
- 3/4 Cup Flour
- 1/2 Tsp Cinnamon
Instructions
- Preheat oven to 350°
- Peel apples, and dice.
- Mix apples in bowl with Orange Juice.
- Grease each ramekin with Pam or other brand spray.
- Fill each ramekin about halfway with apple mixture.
- Cut margarine into chunks, making it easier to mix in with other ingredients.
- Mix sugar, flour, and cinnamon into margarine until a crumbly mixture forms.
- Top each ramekin with topping mixture.
- Bake for 40 minutes or until top browns.
