Here is a good news page for KosherLoSo! There are so many low sodium options available for baking goods. And this leaves so many more options available for you to bake to your heart's content.
The bad news is that if you bake to your heart's content, your waistline and your health may not be what you want it to be. Further, even if you bake a ton, if you eat all of it without watching serving sizes, it will no longer be low sodium. However, we give you the tools to get off on the right foot and bake in a low sodium way. What you do after that is your business, and is between you and your scale.
Almost all baking products are very low sodium with the very glaring exceptions of Baking Soda and Baking Powder. Baking Soda is also referred to as bicarbonate of soda or sodium bicarbonate -- and if you are seeing the sodium word, you know this can't be good. It basically means that baking soda is a form of sodium. Any time a recipe calls for baking soda, you should be on the alert. Baking Powder is less of a problem. However, baking powder does have baking soda in it.
The good news is that there are alternatives. The other piece of good news is that usually a recipe calls for a very small amount of either of these ingredients, and when spread out across the entire recipe, it does not translate into a high sodium count per serving size. One thing is for sure, anything you bake yourself will definitely be much lower sodium than a packaged item or something bought in a bakery,
If you are looking for alternative products, Ener-G makes both a zero sodium baking powder and baking soda. The catch is that you need to double each one when using it. So if your recipe says 1 Tsp baking soda, and you are using the Ener-G brands, you need to use 2 Tsp instead. Same for their baking powder. I personally find this confusing, and ripe for error. In addition, I have used the Ener-G products and I don't love how my baked goods have come out. I am a dessert nut, so this matters a lot to me. If I am wasting my calories on a chocolate chip cookie, it needs to be perfect. I have had more success with the Hain Sodium free, or Rumford reduced sodium.
Other baking goods that are sodium free are yeast, cocoa, corn starch, sugar, and most importantly flour! Chocolate chips and Quaker Oats are also zero sodium. Critical for your cookies.
